Its still winter in Calgary friends and I'm trying to think optimistic tropical thoughts to get me through the next couple months of winter. SOOO today I thought I'd share my favourite warm drink recipe. Its simple, and I feel a tad healthier when I drink it. Coconut water hot chocolate!
You will need (Feeds 5 regular mug servings)
5 coconuts and the coconut water inside them.
1 small can of hot chocolate dry mix.
1 container of almond or pineapple juice/ flavouring.
Break your coconuts in half by using a large knife and cutting board. Wedge the knife in your coconut then take the whole knife and coconut and slam it on the board. It will make a nice crack in the coconut. Start to break the coconut over a bowl to catch the water. Once you break the 5 coconuts drill holes through the coconut husks to create the straw hole. Pour the fresh coconut water either into a pan or in my case a hot coco machine. Mix the coco powder with the heated coconut water. I add about 3 scoops per person so about 15-20 depending on how chocolatey you like your coco. Add 2 tsp of almond flavouring or pineapple juice. If I'm in the mood for a more exotic taste thats when I'll add the pineapple juice. Continually stir ,pour in a glass and cover with the half coconut husk lids! So cute and a nice little escape or cute drink for a party. The coconut water tastes so fresh and delicious and I love the nutty chocolate taste it gives the drink.
