It's that Time of Year again Back to School And I've been busy preparing everything my kids need all the way down to Lunches x 3. My Boys are picky eaters. And I basically have to beg them to eat at dinner time every night. So lunch scares me a tad. I want to make sure they are eating healthy and actually eating!
We did fondue the other night for desert and a brilliant idea popped into my head. Let's let them make lunch on a stick with dip! They can make it themselves, pick out individual pieces and I know it will make it fun enough to eat. It doesn't require extra from me because I already buy precut fruit for myself every week from costco so adding the occasional roll of turkey or pepperoni was no big deal.
Heres a list of the foods we tried.
For the dips I rotate between greek yogurt,ranch.honey mustard,hazelnut free nutella and Italian dressing.
I made my kids sort the various fruits, veggies, meat and cheese in colours. I told them they could pick the food on their sticks as long as they had one item of each color in each kabob. I told them I expected the whole Kabob to be eaten if they wanted a fun lunch like this again. I put some of the meats in the purple ,yellow and red bowls so they'd have to pick protein and veggies. My kids loved putting them together and have asked for this every day. I love that you could possibly theme it too. For instance do a Hawaiian day with pineapple, ham coconut ect.. or a Mexican day with avocado,red pepper and tortilla with cinnamon. The possibilities are endless and its nice to rotate the fruit/veggies thru whats in season. As a tip if you are prepping the night before spray the fresh fruit with lemon juice to keep fruits from turning brown. or quickly whip these out the morning of school they are so freaking fast to put together.
